@Telsyst - I like an old fashioned bamboo cutting board. As far as I know they don't put any lines on them. I can see why a mat would be useful, but I don't think I would cook anything that complicated.

Maybe if I had a restaurant or something I would invest in a cutting mat for accuracy.

Using a cutting mat in cooking is rather common. There are a number of things that you may want to cut in precise amounts in certain recipes.

The down side to using a mat like this in cooking in the necessity in keeping it extra clean. A cutting mat that has any kind of food on it must be cared for carefully.

Just wiping a mat off after use won't be adequate. A mat you cut on needs to be soaked down with a cleaner like bleach. The bleach will help kill bacteria and viruses that work their way into the marks left by your cutting implement.

Everything you cut on should receive special attention in the kitchen.
